Ingredients
Pork Filling
- 1 tablespoon olive oil
- 1 pound ground pork
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup tomato sauce
- 1/4 cup chicken broth
- 1 tablespoon lime juice
Tacos
- 12 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheddar or Mexican blend cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 1/4 cup chopped fresh cilantro
- Lime wedges for serving
Instructions
Preparing the Pork Filling
- Heat olive oil in a large skillet over medium-high heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
- Add the ground pork to the skillet. Cook until the pork is browned and cooked through, breaking it apart with a spoon as it cooks.Tip: Drain any excess fat from the skillet after the pork is cooked to avoid a greasy filling.
- Stir in the ground cumin, chili powder, smoked paprika, dried oregano, salt, and black pepper. Cook for another 2 minutes to toast the spices.
- Add the tomato sauce and chicken broth. Stir to combine and bring the mixture to a simmer.
- Reduce the heat to low and let it simmer for 10-15 minutes, stirring occasionally, until the mixture has thickened.
- Stir in the lime juice and adjust seasoning if necessary.
Assembling the Tacos
- Warm the tortillas in a dry skillet over medium heat or wrap them in foil and heat in a 350°F (175°C) oven for 5-10 minutes.Tip: For a softer tortilla, microwave them wrapped in a damp paper towel for 20-30 seconds.
- Spoon the pork filling onto each tortilla.
- Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, and chopped cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.

For added flavor, consider adding a teaspoon of chipotle powder or adobo sauce from canned chipotles for a smoky, spicy kick.
