    Ingredients

    Chicken Thighs

    • 6 bone-in, skin-on chicken thighs
    • 2 tablespoons olive oil

    • 1 teaspoon dried thyme

    Instructions

    Preparing the Chicken Thighs

    1. Preheat the oven to 400°F (200°C).
    2. Season the chicken thighs with salt and black pepper on both sides.
    3. Heat the olive oil in a large oven-safe skillet over medium-high heat until hot.
    4. Add the chicken thighs, skin-side down, and cook for 5-7 minutes until the skin is crispy and golden brown. Flip the chicken thighs and cook for another 5 minutes.

    Making the Lemon Herb Sauce

    1. In the same skillet, reduce the heat to medium and add the unsalted butter.
    2. Once the butter has melted, add the minced garlic and cook for 1-2 minutes until fragrant.
    3. Stir in the lemon juice, lemon zest, dried oregano, dried thyme, and dried rosemary. Cook for an additional 1 minute.
    4. Add the chicken broth and bring the mixture to a simmer.
    5. Return the chicken thighs to the skillet, skin-side up, and spoon some of the sauce over the top.

    Baking the Chicken Thighs

    1. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken thighs are cooked through and reach an internal temperature of 165°F (75°C).
    2. Remove the skillet from the oven and sprinkle the chicken thighs with chopped fresh parsley.

    Serving the Chicken Thighs

    1. Serve the chicken thighs with sautéed spinach and roasted cauliflower.
    2. Garnish with fresh lemon wedges for an extra burst of flavor.

    For extra crispy skin, broil the chicken thighs for the last 3-5 minutes of baking.
