    Ingredients

    Lamb Filling

    • 1 tablespoon olive oil
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 pound ground lamb
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 cup chopped fresh cilantro
    • Juice of 1 lime

    Taco Assembly

    • 12 small corn or flour tortillas
    • Shredded lettuce
    • Diced tomatoes
    • Crumbled feta cheese
    • Sliced avocado or guacamole
    • Sliced jalapeños
    • Lime wedges

    Instructions

    Cooking the Lamb Filling

    1. Heat olive oil in a large skillet over medium heat.
    2. Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
    3. Add the ground lamb to the skillet. Cook until browned and cooked through, breaking it up with a spoon as it cooks, about 5-7 minutes.
    4. Stir in the ground cumin, ground coriander, smoked paprika, dried oregano, ground cinnamon, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
    5. Remove the skillet from the heat. Stir in the chopped fresh cilantro and lime juice. Mix well to combine.

    Taco Assembly

    1. Warm the tortillas in a dry skillet over medium heat or wrap them in foil and heat in a 350°F (175°C) oven for 5-10 minutes.Tip: For a softer tortilla, microwave them wrapped in a damp paper towel for 20-30 seconds.
    2. Spoon the lamb filling onto each tortilla.
    3. Top with shredded lettuce, diced tomatoes, crumbled feta cheese, sliced avocado or guacamole, and sliced jalapeños.
    4. Serve with lime wedges on the side for squeezing over the tacos.
