Ingredients
Lamb Filling
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 pound ground lamb
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
Taco Assembly
- 12 small corn or flour tortillas
- Shredded lettuce
- Diced tomatoes
- Crumbled feta cheese
- Sliced avocado or guacamole
- Sliced jalapeños
- Lime wedges
Instructions
Cooking the Lamb Filling
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
- Add the ground lamb to the skillet. Cook until browned and cooked through, breaking it up with a spoon as it cooks, about 5-7 minutes.
- Stir in the ground cumin, ground coriander, smoked paprika, dried oregano, ground cinnamon, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
- Remove the skillet from the heat. Stir in the chopped fresh cilantro and lime juice. Mix well to combine.
Taco Assembly
- Warm the tortillas in a dry skillet over medium heat or wrap them in foil and heat in a 350°F (175°C) oven for 5-10 minutes.Tip: For a softer tortilla, microwave them wrapped in a damp paper towel for 20-30 seconds.
- Spoon the lamb filling onto each tortilla.
- Top with shredded lettuce, diced tomatoes, crumbled feta cheese, sliced avocado or guacamole, and sliced jalapeños.
- Serve with lime wedges on the side for squeezing over the tacos.
