Ingredients

Kofta

  • 1 pound ground lamb
  • 1 small onion, finely grated

Instructions

Making the Kofta

  1. In a large bowl, combine the ground lamb, finely grated onion, minced garlic, chopped parsley, ground cumin, ground coriander, ground cinnamon, paprika, ground sumac (if using), salt, and black pepper. Mix well to combine.Tip: Mix the ingredients gently with your hands to avoid overworking the meat.
  2. Divide the mixture into 8 equal portions. Shape each portion into a cylindrical or oval-shaped kofta around a skewer or shape them into meatballs.

Cooking the Kofta

  2. Brush the grill grates or grill pan with olive oil to prevent sticking.

Making the Yogurt Sauce

Serving the Lamb Kofta

  1. Serve the cooked lamb kofta hot off the grill.
