Pork Stir-Fry
- 1 lb ground pork
- 1 tablespoon coconut oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, thinly sliced
- 1 cup broccoli florets
- 1 cup snow peas
- 1 cup shredded cabbage
- 2 tablespoons soy sauce (gluten-free)
- 1 tablespoon fish sauce
- 1 teaspoon sesame oil
- 1 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons chopped green onions

Instructions
Preparing the Stir-Fry
- Heat the coconut oil in a large skillet or wok over medium-high heat.
- Add the finely chopped onion and cook until soft, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the ground pork to the skillet and cook until browned, breaking it up with a spoon as it cooks, about 8-10 minutes. Drain any excess fat.
- Stir in the thinly sliced bell pepper, broccoli florets, snow peas, and shredded cabbage. Cook for 5-7 minutes until the vegetables are tender but still crisp.
- Reduce the heat to medium-low and stir in the soy sauce, fish sauce, sesame oil, ground ginger, and red pepper flakes (if using). Cook for an additional 2-3 minutes until the flavors are well combined.
- Remove from heat and sprinkle with chopped green onions.

- Serve the keto pork stir-fry over cauliflower rice for a complete low-carb meal.
