    Ingredients

    Chicken Filling

    • 1 tablespoon olive oil
    • 1 pound boneless, skinless chicken breasts, cut into small pieces
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 teaspoon ground cumin
    • 1 teaspoon chili powder
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon salt

    • 1 can (14.5 ounces) diced tomatoes, drained

    • Juice of 1 lime
    • 2 tablespoons chopped fresh cilantro

    Taco Assembly

    • 12 small corn or flour tortillas
    • Shredded lettuce
    • Diced tomatoes
    • Shredded cheddar or Mexican blend cheese
    • Sliced avocado or guacamole
    • Sour cream
    • Salsa
    • Lime wedges

    Instructions

    Preparing the Chicken Filling

    1. Heat olive oil in a large skillet over medium-high heat.
    2. Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
    3. Add the chicken pieces to the skillet. Cook until browned and cooked through, stirring occasionally, about 5-7 minutes.
    4. Stir in the ground cumin, chili powder, smoked paprika, dried oregano, salt, and black pepper. Cook for another 2 minutes to toast the spices.
    5. Add the diced tomatoes, chicken broth, and lime juice to the skillet. Stir to combine.
    6. Bring the mixture to a simmer and let it cook for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
    7. Stir in the chopped cilantro. Remove from heat.

    Taco Assembly

    1. Warm the tortillas in a dry skillet over medium heat or wrap them in foil and heat in a 350°F (175°C) oven for 5-10 minutes.Tip: For a softer tortilla, microwave them wrapped in a damp paper towel for 20-30 seconds.
    2. Spoon the chicken filling onto each tortilla.
    3. Top with shredded lettuce, diced tomatoes, shredded cheese, sliced avocado or guacamole, sour cream, and salsa.
    4. Serve with lime wedges on the side for squeezing over the tacos.
