Chicken Filling
- 1 tablespoon olive oil
- 1 pound ground chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1/2 cup shredded carrots
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes (optional)

- 1/4 cup chopped green onions
- 2 tablespoons chopped fresh cilantro
- 1 head iceberg or butter lettuce, leaves separated

Instructions
Preparing the Chicken Filling
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
- Add the ground chicken to the skillet. Cook, breaking it up with a spoon as it cooks, until browned and cooked through.
- Add the diced red bell pepper and shredded carrots to the skillet. Cook for an additional 2-3 minutes until the vegetables are tender.
- In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, grated ginger, and red pepper flakes (if using). Pour the sauce over the chicken mixture in the skillet and stir to combine.
- Cook for another 2-3 minutes, stirring occasionally, until the sauce is heated through and the chicken mixture is evenly coated. Season with salt and pepper to taste.
- Stir in the chopped green onions and cilantro. Remove from heat.
Serving the Chicken Lettuce Wraps
- Spoon the chicken filling into the center of each lettuce leaf.
- If desired, top with chopped peanuts, sliced green onions, sesame seeds, and a drizzle of Sriracha sauce.
- Fold the sides of the lettuce leaf over the filling and roll it up like a burrito.

While iceberg or butter lettuce leaves are commonly used for lettuce wraps, you can also use romaine lettuce leaves for a crisp and sturdy wrap.
