Ingredients
Filling
- 1 tablespoon vegetable oil
- 1 pound ground chicken, turkey, or pork
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 can (8 ounces) water chestnuts, drained and finely chopped
- 1 cup shiitake mushrooms, stems removed and finely chopped
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sriracha or other chili sauce (optional)
- 1 teaspoon sesame oil
- 2 green onions, thinly sliced
- 1/4 cup chopped fresh cilantro
Serving
- 1 head of butter lettuce or iceberg lettuce, leaves separated
- Shredded carrots
- Bean sprouts
- Chopped peanuts
- Lime wedges
Instructions
Preparing the Filling
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and fresh ginger, and cook for another 1-2 minutes until fragrant.
- Add the ground chicken (or turkey or pork) to the skillet. Cook until browned and cooked through, breaking it up with a spoon as it cooks, about 5-7 minutes.
- Stir in the finely chopped water chestnuts and shiitake mushrooms. Cook for another 2-3 minutes until the mushrooms are tender.
- Add the hoisin sauce, soy sauce, rice vinegar, sriracha (if using), and sesame oil. Stir to combine and cook for an additional 2-3 minutes until the mixture is well-coated and heated through.
- Remove the skillet from the heat and stir in the thinly sliced green onions and chopped fresh cilantro.
Serving the Lettuce Wraps
- Arrange the separated lettuce leaves on a platter.
- Spoon the filling into each lettuce leaf.
- Top with shredded carrots, bean sprouts, and chopped peanuts.
- Serve with lime wedges on the side for squeezing over the wraps.
