    Ingredients

    Pork Filling

    • 1 tablespoon olive oil
    • 1 pound ground pork
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced

    • 1 teaspoon chili powder
    • 1/2 teaspoon smoked paprika

    Tacos

    • 12 small corn or flour tortillas
    • 1 cup shredded lettuce
    • 1 cup diced tomatoes
    • 1 cup shredded cheddar or Mexican blend cheese
    • 1/2 cup sour cream
    • 1/2 cup salsa
    • 1/4 cup chopped fresh cilantro
    • Lime wedges for serving

    Instructions

    Preparing the Pork Filling

    1. Heat olive oil in a large skillet over medium-high heat.
    2. Add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
    3. Add the ground pork to the skillet. Cook until the pork is browned and cooked through, breaking it apart with a spoon as it cooks.Tip: Drain any excess fat from the skillet after the pork is cooked to avoid a greasy filling.
    4. Stir in the ground cumin, chili powder, smoked paprika, dried oregano, salt, and black pepper. Cook for another 2 minutes to toast the spices.
    5. Add the tomato sauce and chicken broth. Stir to combine and bring the mixture to a simmer.
    6. Reduce the heat to low and let it simmer for 10-15 minutes, stirring occasionally, until the mixture has thickened.
    7. Stir in the lime juice and adjust seasoning if necessary.

    Assembling the Tacos

    1. Warm the tortillas in a dry skillet over medium heat or wrap them in foil and heat in a 350°F (175°C) oven for 5-10 minutes.Tip: For a softer tortilla, microwave them wrapped in a damp paper towel for 20-30 seconds.
    2. Spoon the pork filling onto each tortilla.
    3. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, and chopped cilantro.
    4. Serve with lime wedges on the side for squeezing over the tacos.

    For added flavor, consider adding a teaspoon of chipotle powder or adobo sauce from canned chipotles for a smoky, spicy kick.
