Meatloaf
- 1 tablespoon olive oil
- 1 small onion, finely chopped

- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Instructions
Preparing the Meatloaf
- Preheat your oven to 350°F (175°C). Grease a loaf pan with olive oil or non-stick cooking spray.
- Heat olive oil in a skillet over medium heat. Add the chopped onion, minced garlic, finely chopped celery, and grated carrot. Sauté until the vegetables are softened, about 5 minutes.
- Stir in the dried thyme, dried oregano, smoked paprika, salt, and black pepper. Cook for another minute until fragrant. Remove from heat and let it cool slightly.
- In a large bowl, combine the cooked vegetable mixture with ketchup, Worcestershire sauce, and Dijon mustard.
- Add the ground turkey, breadcrumbs, grated Parmesan cheese, chopped fresh parsley, and eggs to the bowl. Mix until well combined.
Forming the Meatloaf
- Transfer the turkey mixture to the greased loaf pan. Press it down evenly with a spatula.
- Prepare the glaze: In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar until smooth.
- Spread the glaze over the top of the meatloaf, covering it completely.
Baking the Meatloaf
- Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (75°C).
- Let the meatloaf rest in the loaf pan for 10 minutes before slicing and serving.

- Serve the turkey meatloaf slices with mashed potatoes and steamed vegetables for a comforting meal.
- Leftover slices are delicious in sandwiches or wraps for a quick lunch.
