    Ingredients

    Meatloaf

    • 1 tablespoon olive oil
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 celery stalk, finely chopped
    • 1 carrot, grated
    • 1 teaspoon dried thyme
    • 1 teaspoon dried oregano
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon salt

    • 1/4 cup ketchup
    • 2 tablespoons Worcestershire sauce
    • 1 tablespoon Dijon mustard
    • 1 pound ground turkey
    • 1/2 cup breadcrumbs
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup chopped fresh parsley
    • 2 large eggs

    Glaze

    • 1/4 cup ketchup
    • 2 tablespoons brown sugar
    • 1 tablespoon apple cider vinegar

    Instructions

    Preparing the Meatloaf

    1. Preheat your oven to 350°F (175°C). Grease a loaf pan with olive oil or non-stick cooking spray.
    2. Heat olive oil in a skillet over medium heat. Add the chopped onion, minced garlic, finely chopped celery, and grated carrot. Sauté until the vegetables are softened, about 5 minutes.
    3. Stir in the dried thyme, dried oregano, smoked paprika, salt, and black pepper. Cook for another minute until fragrant. Remove from heat and let it cool slightly.
    4. In a large bowl, combine the cooked vegetable mixture with ketchup, Worcestershire sauce, and Dijon mustard.
    5. Add the ground turkey, breadcrumbs, grated Parmesan cheese, chopped fresh parsley, and eggs to the bowl. Mix until well combined.

    Forming the Meatloaf

    1. Transfer the turkey mixture to the greased loaf pan. Press it down evenly with a spatula.
    2. Prepare the glaze: In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar until smooth.
    3. Spread the glaze over the top of the meatloaf, covering it completely.

    Baking the Meatloaf

    1. Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (75°C).
    2. Let the meatloaf rest in the loaf pan for 10 minutes before slicing and serving.
